Kokam is an evergreen tree native to India.  The fruit resembles a plum but is closely related to the mangosteen.  Sharp, and acidic, the rind of the kokam is typically dried and salted to be used as a condiment in curries, or simply as a souring agent, like tamarind. Kokam seeds contain 23-26% fat.  Because that fat remains solid at room temperature, it can be used as a substitute for cocoa butter.  The fruit has been used in Ayurvedic medicine to treat skin ailments such as rashes, burns, and chafed skin.  Various parts of the fruit can be used as an antiseptic or an emollient.  Studies done in Mumbai in 2006 showed that kokam has significant antioxidant properties.

Amrut kokam is made from the fruit of the kokam, which is steeped in sugar syrup to make a cold beverage that helps to beat the heat and relieve sunstroke.
