Apricots are a drupe, or stone fruit, and are closely related to peaches, plums, cherries, and almonds. Apricots were first discovered growing wild on the mountain slopes of China. Now they are grown commercially in Turkey, southern France, coastal Spain, southern Italy, Australia, southern Africa, Chile and California.
Because apricots are extremely fragile, they are mainly canned and dried, rather than shipped fresh. In all forms, apricots are very nutritious and are known for their delicate, sweet flavor. They are easily re-hydrated by boiling in fruit juice or water, and are a great flavor-enhancer for yogurt, ice cream, cottage cheese, salads, smoothies, and desserts.
