Thai Melon

Thai melon is thought to have originated in Africa, but it is grown in Asia and used in Thai cuisine.  Not to be confused with bitter melon, Thai melon is similar to honeydew melon, with a pale green rind and a sweet, juicy, orange flesh (like cantaloupe.)  This fruit is eaten raw, or combined with other ingredients like sticky rice and coconut cream in desserts.  The juice can also be enjoyed straight or in combination with coconut cream.  Finally, Thai melon makes a delicious and unique dried snack to be eaten alone or in a blend as a trail mix.
