Watermelon is native to southern Africa but now grows in many parts of the world. Commonly referred to as a member of the melon family, the watermelon is actually an accessory fruit that is a “false berry”; the fruit develops out of an inferior ovary, rather than the superior one, as in a true berry. Common varieties of watermelon are over 92% water by weight, the highest water percentage of any fruit. Watermelons have a green-and-yellow striped thick, smooth, outer rind. The inside of the watermelon is red in color, with a very juicy flesh. The seeds, which are commonly discarded in the West, are also edible. In China, roasted watermelon seeds are a popular snack, similar to sunflower seeds. The seeds from the watermelon can also be pressed to extract cooking oil. In addition, watermelon rind can also be used to make a healthy snack. One common Chinese preparation calls for the rind, with the skin removed, to be cooked with sugar, rum, and a variety of spices.
