Pineapple is both a tropical and a subtropical fruit that is grown in warm climates around the world. The meat is juicy, with sweet and tart flavors that complement one another perfectly.
Pineapple is found in numerous varieties. Smooth Cayenne makes up about 90% of all traded pineapple. Champaka, a variety of Smooth Cayenne, is the pineapple commonly found in stores. A newer variety, Gold Pineapple, is smaller and much sweeter than most other varieties. Other variations of the fruit include Queen, Spanish, Red Spanish, and Pernambuco.
The acidity of pineapples—which is assessed as a means of determining their quality--is greatly affected by where they are grown. The Smooth Cayenne pineapple grown in Hawaii has much higher acidity than those grown in Thailand and much of Central America. Thailand has long been the world leader in producing quality pineapple and continues to set the standard even today.
